Red-oil rice is very healthy and tasty too. I came up with this recipe on a Monday morning while I was thinking of what to cook for breakfast before going to work. Luckily, I had all the ingredients at home. Ever since then, I’ve cooked it several times. Red-oil rice is very easy and cheap to prepare. The first time I cooked it, I was surprised that it turned out very well. For this recipe, I used short-grain rice.
Ingredients needed to cook red-oil rice
- Rice - 1 cup and quarter
- Red oil - quarter cup
- Seasoning cubes - 3 cubes
- Dry fish
- crayfish - 1 table spoon
- Dry pepper - 1 table spoon and half
- Uziza seeds - quarter spoon
- Fresh garlic - 3 pieces
- Onion - small size
- Salt - pinch of salt to taste
- Ugu and scent leave - 1 hand full
The above picture shows some of the items I bought from the market to cook my red oil rice, which includes short grain rice, red oil, dry fish, ugu leaves, scent leaves, fresh garlic, fresh onion, seasoning cubes, and uziza seeds. I am not going to use all the garlic and uziza seed I bought. I didn’t buy crayfish, pepper, or salt because I have them in my kitchen.
How do I prepare my ingredients to cook red-oil rice?
Preparing ingredients before cooking makes cooking easier and less stressful. First, I put the rice on fire to parboil while I was working on other ingredients. Then, I debone the dry fish completely and wash it with warm water. Washing dry fish with warm water before putting it inside your food helps to remove every dirt and insect that is hiding inside the fish flesh. Next, I wash the leaves and slice them. Then I took two pieces from the garlic I bought and removed the shell, and I did the same to the onions.
The crayfish and pepper I have in store are already grinded. I measure the quantity of pepper, crayfish, and salt I need for my cooking on a plate. Also, measure the red oil and uziza seed I need and pound them in a mortar.
When I finished preparing the other ingredient, the rice was half cooked, so I drained the water and set it aside.

How to cook delicious red-oil rice
- Put the parboiled rice inside the cooking pot, add one and a half cups of water, and add all the other ingredients to it except the sliced leaves. Give it a stir and cover.
- When the water is dry, add the sliced leaves and stir.
Your delicious red-oil rice is ready.
